Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup grated apple
  • 1/3 cup honey
  • 1/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix flours, baking powder, baking soda, cinnamon, and nutmeg in a bowl.
  3. In another bowl, whisk pumpkin puree, grated apple, honey, milk, egg, melted butter, and vanilla.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Divide batter evenly into muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool before serving.

  • Use fresh pumpkin puree for best results.
  • Adjust sweetness by adding more or less honey.
