- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup pumpkin puree
- 1/2 cup grated apple
- 1/3 cup honey
- 1/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- Mix flours, baking powder, baking soda, cinnamon, and nutmeg in a bowl.
- In another bowl, whisk pumpkin puree, grated apple, honey, milk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed.
- Divide batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool before serving.
Notes
- Use fresh pumpkin puree for best results.
- Adjust sweetness by adding more or less honey.
- Store in an airtight container for up to 3 days.
