- 2 large cucumbers, thinly sliced
- 1/4 cup rice vinegar

- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp red pepper flakes
- 1 clove garlic, minced
- 1 tbsp toasted sesame seeds
Instructions
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, red pepper flakes, and garlic.
- Add sliced cucumbers to the bowl and toss to coat evenly.
- Sprinkle with toasted sesame seeds.
- Chill for 30 minutes before serving.
Notes
- For extra crunch, leave the cucumber skin on.
- Adjust the red pepper flakes for more or less heat.
- Best served cold.
