Ingredients

  • 1 9-inch pie crust, baked
  • 3 ripe bananas, sliced
  • 1 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 2 cups whole milk
  • 3 egg yolks, beaten
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped

Instructions

  1. Preheat oven to 350°F (175°C) and bake the pie crust until golden. Let it cool.
  2. Layer sliced bananas on the bottom of the crust.
  3. In a saucepan, mix sugar, flour, and salt. Stir in milk slowly.
  4. Cook over medium heat, stirring constantly, until thickened.
  5. Gradually stir half the hot mixture into beaten egg yolks, then return to the pan.
  6. Boil for 1 minute, stirring. Remove from heat and stir in butter and vanilla.
  7. Pour over bananas in the crust. Let it cool, then refrigerate for 4 hours.
  8. Top with whipped cream before serving.

Notes

  • Use ripe but firm bananas for best texture.
  • Chill the pie thoroughly before adding whipped cream.
  • Store leftovers in the refrigerator.
