- 1 tablespoon taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Cook the rice according to package directions.
- Brown the ground beef in a skillet over medium heat. Drain any excess fat.
- Stir the taco seasoning into the cooked beef.
- Divide the cooked rice among four bowls.
- Top the rice with seasoned beef, black beans, corn, and diced tomatoes.
- Garnish with shredded cheese and chopped cilantro.
- Serve immediately with lime wedges on the side.
