Description

A quick and satisfying meal with seasoned beef, rice, and fresh toppings.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 1 tablespoon taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Cook the rice according to package directions.
  2. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  3. Stir the taco seasoning into the cooked beef.
  4. Divide the cooked rice among four bowls.
  5. Top the rice with seasoned beef, black beans, corn, and diced tomatoes.
  6. Garnish with shredded cheese and chopped cilantro.
  7. Serve immediately with lime wedges on the side.
