A hearty beef stew with tender meat and vegetables in a rich broth.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Add onion and garlic, sauté until softened.
  4. Return beef to the pot, add carrots, potatoes, broth, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Remove bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in during the last 10 minutes.
  • Store leftovers in the fridge for up to 3 days.
