Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
Instructions
- Heat olive oil in a pot over medium heat.
- Brown the beef cubes on all sides, then remove from the pot.
- Add onion and garlic, sauté until softened.
- Return beef to the pot, add carrots, potatoes, broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove bay leaf before serving.
Notes
- For thicker stew, mix 1 tbsp flour with 2 tbsp water and stir in during the last 10 minutes.
- Store leftovers in the fridge for up to 3 days.
