- 1/2 cup cold unsalted butter, cubed
- 1/2 cup caramelized white chocolate, chopped
- 1/2 cup fresh peaches, diced
- 1/2 cup heavy cream
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk flour, sugar, baking powder, and salt.
- Cut in the cold butter until mixture resembles coarse crumbs.
- Stir in caramelized white chocolate and peaches.
- In a separate bowl, whisk cream, egg, and vanilla. Add to dry ingredients and mix until just combined.
- Turn dough onto a floured surface and shape into a 1-inch thick circle. Cut into 8 wedges.
- Place on baking sheet and bake for 15-18 minutes until golden.
- Cool slightly before serving.
Notes
- Use cold ingredients for best texture.
- Caramelize white chocolate by baking at 250°F (120°C) for 10 minutes, stirring occasionally.
- Substitute peaches with other seasonal fruit if desired.
