Ingredients

  • 1/2 cup caramelized white chocolate, chopped
  • 1/2 cup fresh peaches, diced
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until mixture resembles coarse crumbs.
  4. Stir in caramelized white chocolate and peaches.
  5. In a separate bowl, whisk cream, egg, and vanilla. Add to dry ingredients and mix until just combined.
  6. Turn dough onto a floured surface and shape into a 1-inch thick circle. Cut into 8 wedges.
  7. Place on baking sheet and bake for 15-18 minutes until golden.
  8. Cool slightly before serving.
