- 1 cup cake flour
- 1 1/2 cups granulated sugar
- 12 large egg whites
- 1 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1 tbsp orange zest
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 2 cups fresh peaches, sliced
Instructions
- Preheat oven to 325°F (165°C).
- Sift flour and 3/4 cup sugar together three times.
- Beat egg whites, cream of tartar, and salt until soft peaks form.
- Gradually add remaining sugar while beating until stiff peaks form.
- Fold in sifted flour mixture, citrus zests, and vanilla.
- Gently pour batter into ungreased tube pan.
- Bake for 45-50 minutes until golden brown.
- Cool upside down for at least 1 hour.
- Top with fresh peach slices before serving.
Notes
- Use room temperature egg whites for best volume.
- Do not grease the pan – cake needs to cling to sides to rise properly.
- For extra flavor, brush cooled cake with peach syrup before topping.
