A light and airy angel food cake infused with citrus flavors, topped with fresh peaches.

Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 12 large egg whites
  • 1 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tbsp orange zest
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 2 cups fresh peaches, sliced

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Sift flour and 3/4 cup sugar together three times.
  3. Beat egg whites, cream of tartar, and salt until soft peaks form.
  4. Gradually add remaining sugar while beating until stiff peaks form.
  5. Fold in sifted flour mixture, citrus zests, and vanilla.
  6. Gently pour batter into ungreased tube pan.
  7. Bake for 45-50 minutes until golden brown.
  8. Cool upside down for at least 1 hour.
  9. Top with fresh peach slices before serving.

Notes

  • Use room temperature egg whites for best volume.
  • Do not grease the pan – cake needs to cling to sides to rise properly.
  • For extra flavor, brush cooled cake with peach syrup before topping.
