- 1 cup basmati rice
- 1 cup coconut milk
- 1 cup water
- 1 tbsp coconut oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the coconut oil over medium heat.
- Add the rinsed rice and stir for 1 minute.
- Pour in the coconut milk and water, then add salt and black pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
Notes
- Use full-fat coconut milk for the best flavor.
- Adjust salt to taste.
- For extra flavor, add a pandan leaf or lemongrass while cooking.
