Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season salmon fillets with salt and pepper, then sear for 3-4 minutes per side. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute.
  4. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  5. Pour in heavy cream and broth, stirring to combine.
  6. Bring to a simmer, then stir in Parmesan cheese.
  7. Return salmon to the skillet and cook for 2 minutes to warm through.
  8. Serve immediately.
