- 4 salmon fillets (about 6 oz each)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season salmon fillets with salt and pepper, then sear for 3-4 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute.
- Add sun-dried tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and broth, stirring to combine.
- Bring to a simmer, then stir in Parmesan cheese.
- Return salmon to the skillet and cook for 2 minutes to warm through.
- Serve immediately.
Notes
- Use fresh salmon for best results.
- Adjust creaminess by adding more broth if needed.
- For extra flavor, sprinkle with fresh basil before serving.
