- 4 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet (1 oz) taco seasoning
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Stir in sour cream and shredded cheese.
- Serve warm over rice or with tortillas.
Notes
- You can use frozen corn instead of canned.
- Adjust the taco seasoning to your taste.
- Add fresh cilantro for extra flavor.
