- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese

- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place chicken breasts in the crockpot.
- Add sun-dried tomatoes, spinach, garlic, Italian seasoning, salt, and pepper.
- Pour chicken broth and heavy cream over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred or slice chicken and stir in Parmesan cheese before serving.
Notes
- For extra flavor, sear the chicken in a pan before adding to the crockpot.
- Substitute half-and-half for heavy cream if you prefer a lighter dish.
- Serve over pasta, rice, or with crusty bread.
