Dilly Beans are pickled green beans flavored with dill and garlic. They make a crunchy, tangy snack or side dish.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 cloves garlic, peeled
  • 2 heads fresh dill or 2 tbsp dill seeds
  • 1 1/2 cups white vinegar
  • 1 1/2 cups water
  • 1 tbsp salt
  • 1 tsp sugar
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Wash and trim the green beans to fit your jar.
  2. Pack the beans vertically into sterilized jars.
  3. Add garlic, dill, and red pepper flakes to each jar.
  4. Heat vinegar, water, salt, and sugar in a saucepan until boiling.
  5. Pour the hot brine over the beans, leaving 1/2 inch headspace.
  6. Remove air bubbles and wipe jar rims.
  7. Seal jars and process in a boiling water bath for 10 minutes.
  8. Let cool completely before storing.

  • Use fresh, firm green beans for best results.
  • Allow 1-2 weeks for flavors to develop.
