Ingredients

  • 1 1/2 cups shredded zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. Squeeze excess moisture from zucchini.
  3. Whisk flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  4. Mix oil, sugars, eggs, and vanilla in another bowl.
  5. Combine wet and dry ingredients. Fold in zucchini and chocolate chips.
  6. Pour into pan. Bake 50-60 minutes until a toothpick comes out clean.
  7. Cool before slicing.

Notes

  • Zucchini adds moisture but doesn’t overpower flavor.
  • Use dark cocoa powder for richer taste.
