- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small head green cabbage, shredded
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add shredded cabbage and minced garlic. Stir for a few minutes.
- Pour in vegetable broth and diced tomatoes.
- Add dried thyme and bay leaf. Season with salt and black pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Remove bay leaf before serving. Garnish with fresh parsley.
Notes
- You can add other vegetables like bell peppers or zucchini.
- Store leftovers in the refrigerator for up to 4 days.
