- 1 1/2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder

- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, cocoa powder, baking soda, salt, and cinnamon.
- In another bowl, mix oil, sugars, eggs, and vanilla until smooth.
- Add grated zucchini to the wet mixture.
- Gradually fold dry ingredients into wet ingredients until combined.
- Pour batter into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Squeeze excess water from zucchini before adding.
- Store in an airtight container for up to 3 days.
- Freeze slices for longer storage.
