A hearty and comforting soup made with ground beef, vegetables, and savory broth, delivering classic hamburger flavors in a warm bowl.


Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Brown the ground beef with the onion and garlic in a large pot over medium heat. Drain any excess fat.
  2. Add the beef broth, water, diced tomatoes, carrots, celery, potatoes, basil, oregano, salt, and pepper to the pot.
  3. Bring the soup to a boil, then reduce the heat to low.
  4. Cover the pot and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
  5. Stir in the fresh parsley just before serving.

Notes

  • You can use ground turkey or chicken instead of beef.
  • Add other vegetables like corn, green beans, or peas.
  • For a thicker soup, mix 2 tablespoons of flour with 1/4 cup of cold water and stir it into the soup during the last 10 minutes of cooking.
  • This soup tastes better the next day as the flavors develop.
