- 1 pound lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 3 medium potatoes, peeled and diced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Brown the ground beef with the onion and garlic in a large pot over medium heat. Drain any excess fat.
- Add the beef broth, water, diced tomatoes, carrots, celery, potatoes, basil, oregano, salt, and pepper to the pot.
- Bring the soup to a boil, then reduce the heat to low.
- Cover the pot and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
- Stir in the fresh parsley just before serving.
Notes
- You can use ground turkey or chicken instead of beef.
- Add other vegetables like corn, green beans, or peas.
- For a thicker soup, mix 2 tablespoons of flour with 1/4 cup of cold water and stir it into the soup during the last 10 minutes of cooking.
- This soup tastes better the next day as the flavors develop.
