- 1 tablespoon olive oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, washed
- 4 cups vegetable broth
- 1 medium potato, peeled and diced
- 1/2 cup heavy cream or coconut milk
- Salt to taste
- Black pepper to taste
- 1/4 teaspoon nutmeg (optional)
Instructions
- Heat the oil or butter in a large pot over medium heat.
- Add the chopped onion and cook until soft, about 5 minutes.
- Add the minced garlic and cook for 1 more minute.
- Add the diced potato and vegetable broth to the pot. Bring to a boil.
- Reduce the heat and let it simmer until the potato is tender, about 15 minutes.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove the pot from the heat. Use an immersion blender to puree the soup until smooth.
- Stir in the cream or coconut milk. Season with salt, pepper, and nutmeg if using.
- Reheat the soup gently if needed, then serve.
Notes
- You can use frozen spinach. Thaw and drain it first.
- For a richer flavor, you can sauté the spinach briefly before adding the broth.
- Adjust the thickness by adding more broth or cream.
