Description

A simple and quick side dish of tender asparagus roasted in the oven until crisp.


Ingredients

  • 1 bunch fresh asparagus (about 1 pound)
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the asparagus and snap off the tough, woody ends.
  3. Pat the asparagus spears dry with a paper towel.
  4. Place the asparagus on a large baking sheet.
  5. Drizzle with olive oil and sprinkle with salt and pepper.
  6. Toss to coat the asparagus evenly.
  7. Arrange the spears in a single layer on the baking sheet.
  8. Roast in the preheated oven for 12-15 minutes, until tender and lightly browned.
  9. Remove from the oven and, if desired, sprinkle with lemon juice and grated Parmesan cheese before serving.

  • Choose asparagus spears that are firm and bright green.
