Instructions
- Preheat grill to medium-high heat.
- Grill corn for 10-12 minutes, turning occasionally, until lightly charred.
- Cut kernels off the cob and transfer to a bowl.
- Mix in mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, lime juice, and salt.
- Divide mixture into serving cups.
- Garnish with extra cheese, cilantro, and a sprinkle of chili powder.
- Serve immediately.
