- 4 fish fillets (such as cod or snapper)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup black olives, pitted and sliced
- 2 tbsp capers, drained
- 4 anchovy fillets, chopped
- 1/2 tsp red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sauté until fragrant, about 30 seconds.
- Stir in diced tomatoes, olives, capers, anchovies, and red pepper flakes.
- Simmer for 10 minutes until the sauce thickens slightly.
- Season fish fillets with salt and pepper, then nestle them into the sauce.
- Cover and cook for 8-10 minutes until the fish is opaque and flakes easily.
- Sprinkle with parsley before serving.
Notes
- Use firm white fish for best results.
- Adjust red pepper flakes for more or less heat.
- Serve with crusty bread or pasta.
