Ingredients

  • 4 medium potatoes, cubed
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with 2 tbsp olive oil, half the garlic, oregano, thyme, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. Rub chicken with remaining olive oil and garlic, then coat with parmesan.
  5. Add chicken to the baking sheet with potatoes.
  6. Bake for 20-25 minutes until chicken reaches 165°F.
  7. Sprinkle with fresh parsley before serving.
