Description

A warming soup featuring ginger and garlic with noodles and bok choy.


Ingredients

Scale
  • 6 cups vegetable broth
  • 8 oz rice noodles
  • 4 baby bok choy, halved lengthwise
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp black pepper

Instructions

  1. Bring the vegetable broth to a boil in a large pot.
  2. Add the minced garlic and grated ginger. Reduce heat and simmer for 5 minutes.
  3. Add the rice noodles and cook according to package instructions, about 4-5 minutes.
  4. Add the halved bok choy and soy sauce. Cook for another 2-3 minutes until the bok choy is tender.
  5. Remove from heat. Stir in the sesame oil and black pepper.
  6. Ladle the soup into bowls and garnish with sliced green onions.

Notes

  • You can use any type of noodle you prefer.
  • Add chili flakes for a spicy version.
  • Swap bok choy for spinach or kale.
