Ingredients

  • 1 1/2 cups grated zucchini
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix zucchini, honey, coconut oil, egg, and vanilla.
  3. In another bowl, whisk flour, cocoa powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients, then fold in chocolate chips.
  5. Pour batter into the loaf pan and bake for 45-50 minutes.
  6. Let cool before slicing.
