Description

A fresh and hearty Italian chopped salad with salami, mozzarella, and crisp vegetables.


Ingredients

Scale
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 4 oz salami, diced
  • 4 oz fresh mozzarella, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Italian dressing

Instructions

  1. Chop romaine lettuce and place in a large bowl.
  2. Add cherry tomatoes, red onion, cucumber, black olives, and pepperoncini.
  3. Toss in salami and mozzarella.
  4. Sprinkle with grated Parmesan.
  5. Drizzle with Italian dressing and toss to combine.
  6. Serve immediately.

Notes

  • Swap salami for grilled chicken for a lighter version.
