Ingredients

  • 1/4 cup (60ml) extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente.
  2. Heat olive oil in a large pan over medium heat.
  3. Add garlic and red pepper flakes, sauté for 1-2 minutes until garlic is golden but not burnt.
  4. Drain pasta, reserving 1/4 cup of pasta water.
  5. Add cooked pasta to the pan with garlic oil, toss to coat.
  6. Pour in reserved pasta water as needed to loosen the sauce.
  7. Season with salt, pepper, and parsley, then toss again.
  8. Serve with grated Parmesan cheese.
