Ingredients

- 1 lb Italian sausage
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 4 cups chicken broth
- 2 cans (15 oz) white beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- Brown the sausage in a large pot over medium heat. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic, oregano, and thyme. Cook for 1 minute.
- Pour in chicken broth, beans, and tomatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add spinach and cooked sausage. Simmer for 5 more minutes.
- Season with salt and pepper. Serve hot.
Notes
- Use spicy Italian sausage for extra heat.
- Substitute kale for spinach if preferred.
- Store leftovers in an airtight container for up to 3 days.
