Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 4 cups chicken broth
  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Brown the sausage in a large pot over medium heat. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until softened.
  3. Add garlic, oregano, and thyme. Cook for 1 minute.
  4. Pour in chicken broth, beans, and tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add spinach and cooked sausage. Simmer for 5 more minutes.
  7. Season with salt and pepper. Serve hot.
