Ingredients

  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 cups chicken broth
  • 2 cups chopped escarole or spinach
  • 1/2 cup small pasta (like acini di pepe)
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Mix beef, pork, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat. Cook onion and garlic until soft.
  3. Add broth and bring to a boil. Drop in meatballs and simmer for 10 minutes.
  4. Add pasta and cook for 8 minutes. Stir in greens and cook for 2 more minutes.
  5. Serve hot with extra Parmesan.
