- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups chicken broth
- 2 cups chopped escarole or spinach
- 1/2 cup small pasta (like acini di pepe)
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
Instructions
- Mix beef, pork, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Form into small meatballs.
- Heat olive oil in a pot over medium heat. Cook onion and garlic until soft.
- Add broth and bring to a boil. Drop in meatballs and simmer for 10 minutes.
- Add pasta and cook for 8 minutes. Stir in greens and cook for 2 more minutes.
- Serve hot with extra Parmesan.

- Make meatballs small for even cooking.
- Use escarole for traditional flavor or spinach for convenience.
- Freeze leftovers for quick meals.
