Description

A simple and comforting pasta dish featuring sweet peas in a savory sauce.


Ingredients

Scale
  • 12 ounces (340g) dry pasta, such as penne or shells
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups frozen peas
  • 1 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Add the frozen peas and vegetable broth to the skillet. Bring to a simmer and cook for 3-4 minutes until the peas are tender.
  5. Add the drained pasta to the skillet with the peas. Toss everything together, adding reserved pasta water a little at a time until the sauce coats the pasta.
  6. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Serve immediately.

Notes

  • You can use fresh peas when in season.
  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • The reserved pasta water helps create a silky sauce.
