- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2/3 cup cold butter
- 4–5 tablespoons ice water
- 6 cups peeled and sliced peaches
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Mix flour and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add water, 1 tablespoon at a time, until dough forms.
- Divide dough in half and roll out for bottom crust.
- Place crust in pie dish.
- Combine peaches, sugar, cornstarch, cinnamon, and lemon juice in a bowl.
- Pour filling into crust.
- Roll out top crust and place over filling.
- Crimp edges and cut slits in top crust.
- Bake at 375°F for 45-50 minutes.
Notes
- Use ripe peaches for best flavor.
- Let pie cool completely before slicing.
- Serve with vanilla ice cream if desired.
