  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
  3. In another bowl, mix pumpkin puree, oil, eggs, sugars, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. Beat cream cheese, sugar, egg, and vanilla in a separate bowl until smooth.
  6. Pour half the pumpkin batter into the pan. Spoon cream cheese mixture over it, then top with remaining batter.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
