- 2 salmon fillets (6 oz each)
- 1 cup orzo
- 2 cups chicken or vegetable broth
- 1 lemon (zested and juiced)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Heat 1 tbsp olive oil in a pan over medium-high heat. Season salmon with salt and pepper.
- Sear salmon for 3-4 minutes per side until golden and cooked through. Set aside.
- In the same pan, add remaining olive oil and sauté garlic for 30 seconds.
- Add orzo and toast for 1 minute, then pour in broth. Bring to a boil.
- Reduce heat, cover, and simmer for 8-10 minutes until orzo is tender.
- Stir in lemon zest, lemon juice, and parsley. Adjust seasoning.
- Serve salmon over the lemon orzo. Enjoy.
Notes
- Use fresh lemon for the best flavor.
- Replace broth with water if needed.
- Add a pinch of red pepper flakes for a spicy kick.
