Ingredients

- 2 lbs chicken breast, diced
- 4 roasted hatch chiles, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Add onion and garlic, sauté until softened.
- Stir in roasted hatch chiles, diced tomatoes, chicken broth, cumin, and paprika.
- Simmer for 20 minutes, stirring occasionally.
- Season with salt and pepper.
- Serve hot.
