- 1 tbsp taco seasoning
- 1/2 cup black beans, rinsed
- 1/2 cup corn kernels
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheese
- 1/4 cup Greek yogurt
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, cook until softened.
- Add ground turkey and cook until browned.
- Stir in taco seasoning, black beans, and corn.
- Cut open baked sweet potatoes and fluff the insides.
- Stuff with turkey taco mixture.
- Top with cheese, Greek yogurt, and cilantro.
- Serve with lime wedges.

- For extra heat, add diced jalapeños.
- Substitute ground beef or chicken for turkey if preferred.
