- 2 sheets puff pastry
- 500ml milk
- 100g sugar
- 3 egg yolks
- 40g cornflour
- 1 tsp vanilla extract
- 200ml whipping cream
Instructions
- Preheat oven to 200°C. Bake puff pastry sheets for 15 minutes until golden. Cool.
- Heat milk in a saucepan until steaming.
- Whisk sugar, egg yolks, and cornflour in a bowl.
- Gradually pour hot milk into egg mixture, whisking constantly.
- Return mixture to saucepan. Cook on medium heat, stirring until thick.
- Remove from heat. Stir in vanilla. Cool slightly.
- Whip cream to soft peaks. Fold into custard.
- Place one pastry sheet on a tray. Spread custard evenly.
- Top with second pastry sheet. Chill for 4 hours.
- Dust with icing sugar before serving.

- Chill thoroughly before slicing for clean cuts.
