Ingredients

  • 2 sheets puff pastry
  • 500ml milk
  • 100g sugar
  • 3 egg yolks
  • 40g cornflour
  • 1 tsp vanilla extract
  • 200ml whipping cream

Instructions

  1. Preheat oven to 200°C. Bake puff pastry sheets for 15 minutes until golden. Cool.
  2. Heat milk in a saucepan until steaming.
  3. Whisk sugar, egg yolks, and cornflour in a bowl.
  4. Gradually pour hot milk into egg mixture, whisking constantly.
  5. Return mixture to saucepan. Cook on medium heat, stirring until thick.
  6. Remove from heat. Stir in vanilla. Cool slightly.
  7. Whip cream to soft peaks. Fold into custard.
  8. Place one pastry sheet on a tray. Spread custard evenly.
  9. Top with second pastry sheet. Chill for 4 hours.
  10. Dust with icing sugar before serving.
