- 8 oz pasta (penne or rotini)
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a small bowl, whisk olive oil, vinegar, mustard, garlic, salt, and pepper.
- Toss cooled pasta with the dressing.
- Add tomatoes, olives, red onion, and basil. Mix well.
- Sprinkle Parmesan cheese on top before serving.
Notes
- Chill for at least 1 hour for better flavor.
- Add grilled chicken for extra protein.
- Store leftovers in an airtight container for up to 3 days.
