- 2 cups diced tomatoes

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden.
- Transfer chicken to a baking dish and bake for 15-20 minutes until cooked through.
- In a bowl, mix tomatoes, basil, garlic, and balsamic vinegar.
- Top baked chicken with tomato mixture and sprinkle with parmesan cheese.
- Serve immediately.

- Use fresh, ripe tomatoes for best flavor.
- Chicken is done when internal temperature reaches 165°F (74°C).
- For extra crispiness, broil for 1-2 minutes after adding cheese.
