- 6 large eggs
- 1/4 cup milk
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup cooked breakfast sausage or bacon, crumbled
- 1 cup shredded cheese
- 4 large flour tortillas
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C). Line a sheet pan with parchment paper.
- In a bowl, whisk eggs with milk, salt, pepper, and garlic powder.
- Spread diced bell pepper and onion evenly on the sheet pan.
- Pour egg mixture over vegetables. Sprinkle cooked sausage or bacon on top.
- Bake for 15-18 minutes until eggs are set.
- Sprinkle cheese over the cooked eggs and return to oven for 2 minutes to melt.
- Divide the mixture among tortillas and roll into burritos.
- Serve immediately or wrap in foil for later.
Notes
- Store leftovers in the fridge for up to 3 days.
- Reheat in microwave for 30-60 seconds before serving.
- Add hot sauce or salsa for extra flavor.
